Though the taste profile is different, nonfat/lowfat yogurt can have a pretty silky mouthfeel. When I make gyros, I prepare tzaziki for my wife, but since I detest unpickled cucumber, I just add some salt to plain yogurt for mine. Also, for a burrito, a well ripened avocado with a little salt and lime juice can make a nice sauce. This afternoon I made cheese stuffed poblanos, not the full relleno, but just roasted, imperfectly skinned, filled with Cheddar, floured, egg washed, re-foured with corn flour and pan fried. I pan seared a porterhouse med well, and we split an avocado with key lime and salt squeezed on. We didn't break out the hot salsas, as we had fried potatoes and eggs with salsa rojo for breakfast. On our short trip to KC we bought a tub of great, very hot red, and when we got home I spooned that into 1oz containers, and froze most of it.
