I realize you've had other things on your mind but if you haven't
noticed that you've not been paying attention. He posts about making
so-called English toffee frequently. The posts don't say much. He
yells a lot about using butter and cream and they taste better than
'Heath Bars'. He got the recipe from the Joy of cooking, although at
first he didn't admit to that. Last month he posted about "enrobing" it
in fake chocolate. Surely not what JOC intended. He posted he almost
burned the last batch, but says he likes it that way. Did you miss
where he said he was going to give away "his" toffee when he runs for
Mayor? LOLOL You've been missing quite toffee show.

He may know what he likes but you're wrong if you think I've never
mentioned making so-called 'English Toffee'. I've even posted a
microwave version a couple of times over the years.

I've done it on the stovetop, as well. Butter toffee with slivered
almonds, just not using the recipe from the JOC cookbook. No cream
involved in mine. It's delicious and yes, it tastes like Heath Bars.
Never "almost burnt" (I use a candy thermometer). Never, *ever* fake
chocolate.

For a time, they were a huge client of the company, although I did not
interact with them at all. As they branched out and left their history
behind, I did notice that the sorts of research they did changed
radically, from predominant "Are we pleasing our customers?" to "How
can we sell the customers all these new things we want to offer?"
Basically, from taste testing and perfecting, to the best shiny
placement on menu boards.

_lots_ of Frank's hot sauce. And a couple of token leaves of lettuce,

Anyone who wants the details should be able to find a JoC cookbook. He
doesn't have to provide a step by step how-to. I was genuinely
surprised she'd forgotten he makes toffee, given how often he crows
about it.

lot easier to find than a Joy of Cooking cookbook, which I've never
heard of, except here, or seen.

Indeed. Bruce doesn't cook, why would he have heard of a well known
cookbook while reading and posting in a cooking newsgroup? LOL

I don't recall John ever posting the recipe. He shouts about BUTTER and
CREAM and chocolate (then uses fake chocolate, ugh) and "better than
Heath Bars!".

I can find many recipes for "English Toffee" online. I cannot find one
online from an actual 'Joy of Cooking' cookbook. Seems to be fiercely
protected unless you buy an old cookbook.

No matter, I already know how to make delicious "English Toffee".
Rather than completely coat it with chocolate (I'm not trying to make
candy bars) I melt small squares of milk chocolate on top of the still
very hot toffee mixture (275F per the candy thermometer) which was
quickly spread on a sheet pan covered with foil. Use a knife to quickly
spread the melting chocolate squares evenly over the top. Then let it
cool and set and later break it into pieces. It's not hard like peanut
brittle - not cooked to a hard crack stage. Soft crack. The butter and
almond toffee is delicious by itself; the chocolate is a compliment.
BTW, you can use any sort of chocolate you'd like.
