I'll follow a brand spanking new recipe to the letter the first time I make it.
If it's too much of one thing or lacking in another, the next time I make that
dish I'll alter those ingredients to suit my taste buds.

My latest escape from madness is to create a perfect citrus-pepper mix. I
intend to us a cheap IKEA hand-grinder. I have been hand mini-dicing
turmeric and ginger so that after dehydrating in my forced-air oven the
pieces will be roughly the same size as the peppercorns & other seeds in
the mix.

The black garlic was a story in itself how not to burn it, because it's
black already and you need to heat it enough to darken it if it were not
black already, but not hot enough to blacken it because you cannot tell -
it's black already.

In the same store, I found a delightful plant to add a touch of salt
along with a pleasing fresh green plant fragrance:

Sure, but no one is born knowing how to cook or how to adapt a recipe
or what substitutions for certain ingredients might work. Don't have
marjoram? People who haven't done a lot of cooking might not know
oregano can be substituted for marjoram.

Cookbooks provide all sorts of interesting tips like that as well as
provide meal ideas.

I know that the French can be very regimented about food. Lots of their
recipes are practically national institutions. No deviations from the
recipe, please. But the results tend to taste great, so...

I agree, 'get over' JoC. It's a decent resource for things and not as
'Ameriana' as you might think but thats ok.

You are wrong though if you think American cuisine is just fast food.
Thats actually a minimal thing for most of us.

That's a really simple version of it. Most of us spice it up quite a
bit. If you find it in Europe, it's because they are doing American
cooking.

We are not the only place to do fusion cooking, but we show some
fantastic results just like Hawaii (part of America but unique) and
Australia/New Zealand do. Me, I look forward to Australian recipes
when they get posted due to the unique (to me) fusion with Indonesian.
I mean, imagine boiled mutton meets a bird's eye chili!
