Default Ethiopian stew - pretty good!

It has beef, collard greens, potatoes, tomatoes, carrots, onions, and lentils. Plus many spices.

I didn't have Chinese five spice, but the only ingredients I was missing for that were fresh anise and fennel seeds, so I used anise extract.

Since the recipe only makes about a gallon and a half, I thought "wait a minute - TWO teaspoons of salt?" I cut the salt by half.

Also, some people might not want as much pepper as the recipe calls for, but it didn't bother me.

But next time, I just might try using yams instead of potatoes. (I didn't enjoy it as much as a certain Portuguese soup, which DID call for yams - and sausage and kale.. But it's still good.)

It's a middling-fair adaptation of Ethiopian cooking. But more authentic recipes
are available on the web.

I can't vouch for the recipe on that page; I use one out of an Ethiopian
cookbook I've had for years. But it looks pretty close.

I always thought greens were great with smoked beef ribs, but if i'm going to watch my weight, then smoked turkey might be a great switch to flavor cooked veggies.
