To me they look like they got crowded in the wok and par-steamed. I always cook in chapters, first the aromatics, then add the meat, then off to a bowl and on to the veg. Combine and finish with sauce. One thing that tells me a given wok joint is one I want to go back to is char. If those are good older woks that get used a lot they impart a definite wok char to the food, especially beef or pork. Wok char is a bonus you must search for. |

For a while, I saw people dipping fries into soft serve ice cream. I've tried it and it tastes pretty much like French fries dipped in ice cream. These days nobody's doing it any more. I had ordered their mahi mahi, which I thought would be the heart healthiest option from a menu full of high sugar and high salt options. What I got was one tiny piece of fish and two large domes of starch. One was rice with a few black sesame seeds and the other was macaroni salad. I would estimate that the domes had been created using a three cup mixing bowl. It amounted to about 6 cups of starch and maybe an ounce of fish. |

It's probably been that way since there were towns. My guess is that most of the tourists to your town look a lot like you and speak the same language - that probably helps a lot. |
