Fried King prawns with chilli and garlic question
Hi, One of my favorite dishes with my local chinese and many I have been to is the dish: Fried King prawns with chilli, garlic and salt. Also the same seasoning is used for spare ribs with chilli, garlic and salt. I would like to know exactly what the chinese use to get an almost lightly battered fried prawn, which is salty and with garlic/chilli. Any pointers as to what type of flour is used to give them a very light crunchy coating, and what stages the below ingredients are added? the ingredients at the moment that I can list a King prawns Chilli (tiny red and green rings) Onion (fine cut strips) Garlic (finely diced) Peanut oil (or vegetable oil or sesame oil??) Cornflour (for the light partial crispy coating?) Hope someone here can list the correct ingredients etc.. Thanks Andrew UK |
