low carb versions of your jams and preserves? Those of us

Gack! The sugar's there for a reason, Stan, in one form or another.
It's a preservative, as well as having other properties good for
jamming. Gedney made a couple all-fruit spreads for three years, then
dropped them. The difference in the carbs per tbsp serving was about 2,
I think; 40 calories vs 50 per tbsp serving. The all-fruit spreads are
sweetened with concentrated fruit juice -- pear or white grape, as a
rule. A friend of mine is hypoglycemic and had good success making jam
with xylitol after she visited this summer.
