You could make these and just leave the chocolate chips out:

From Google ...

Crash and I have both decided that it's just not worth it to make Toll
House cookies anymore. These are so much better. The cookies are kinda
dense and chewy, yet soft. Not greasy, like Toll House. They don't keep
well, so extras should be frozen until ready to use. I've rarely had them
last long enough for this to be a problem. This one is courtesy of my
mom's sister, Jackie.

Here's a recipe posted in rec.food recipes by "Al B" today...

Soft Sugar Cookies

3 1/4 cup flour
1 tsp soda
1/2 tsp salt
1/2 cup shortening
1 cup sugar
1 egg
1 tsp vanilla
1/2 cup sour cream

Cream butter and sugar. Add eggs and vanilla - mix well. Add dry
ingredients and sour cream alternately starting and ending with dry
ingredients. Roll out to at least 1/2 inch thick and cut out. Bake in
a 375 degree oven for 12-15 min.
If you want you can sprinkle plain or colored sugar on the cookies
before baking. We like to just ice them with regular shortening/10x
sugar icing. Cookies will be soft and cakelike and will keep well if
stored in something like tupperware. We also generally double this
recipe (our shape cutters are larger).
