Default Stewed Apples?

I am trying to find someone who can tell me how to make stewed apples.
"Stewed" may not be the correct word. I have eaten these at Boston
Market. They are sliced and cooked in a way that they are neither firm
or soft. They appear to be cooked in their own juices or a syrup. I
don't know whether they come in a can, or are made from scratch. I
suspect it takes a particular type of apple.

Can anyone tell me about these? I await your expert responses.

Just about any apple will work except Red Delicious or Granny Smith.
Golden Delicious is pretty good for cooking.

I do this frequently in the microwave. It's pretty simple. Cut up 3
medium apples. Add a little lemon or lime juice, some sugar and a
little tapioca starch (this is optional if you want the liquid
thickened). Put everything into a covered casserole dish and microwave
for three minutes. Remove and stir then microwave two more minutes.
Sorry but I'm not much help on measurements.
