Default white fish

Hi all. I have a good friend that earns his living on a boat, and he usually
has a big bag of quick frozen halibut, ling cod, petrale sole, and black cod
for me when he gets in. Any unusual recipes for white fish?

Stew or Chowder! Or do a fish boil - corn, fish, butter, water, onion and
potatoes all boiled together.

Stew or Chowder! Or do a fish boil - corn, fish, butter, water, onion and
potatoes all boiled together.

I've made boatloads of stews and chowders. I've baked it, grilled it,
broiled it, smoked it (black cod, anyways), pan fried it, and generally had
my way with it. I thank you for your suggestion, but I was hoping for
something a bit more esoteric.

I've made boatloads of stews and chowders. I've baked it, grilled it,
broiled it, smoked it (black cod, anyways), pan fried it, and generally had
my way with it. I thank you for your suggestion, but I was hoping for
something a bit more esoteric.

I prefer cod beer battered and deep fried and sprinkled with malt vinegar
(as in fish & chips) - not very unusual, I know. Never had black cod so I
don't know. Halibut (steaks, anyway) I usually just marinate in bottled
Italian dressing and a bit of lemon juice, then broil.

Sole Piccata

1-1/2 lb. sole fillets
1/4 c. dried breadcrumbs
2 Tbs. olive oil
1 Tbs. butter
1/4 tsp. pepper
1 Tbs. white wine
juice of one small lemon
1 Tbs. capers

Sprinkle breadcrumbs on a sheet of waxed paper. Turn the fillets on waxed
paper to lightly coat with crumbs. In a large skillet melt the butter in
oil over medium-high heat until hot. Add sole and cook to a light golden
brown on each side (be careful when turning it as sole can be delicate).
Remove sole to a platter and keep warm. Add wine to pan to deglaze,
stirring to blend well. Squeeze in the juice of one lemon and stir intil
blended. Add a slurry of cornstarch dissolved in cold water to lightly
thicken the sauce if necessary. Add capers. Spoon the sauce over the sole
and serve immediately.

Poached or pan seared halibut with a drizzle of freshly made Bearnaise Sauce
is quite tasty.

Fish Tacos? I've never tried them though...

Now that I will try! I love both chili paste and vermouth, but have never
