Melton's market has sold persimmon pulp for several years
now, but I have just recently become interested in cooking, so I had to try some. The standard fare is persimmon pud- ding, and I want to try that, but bars are the first thing I tried. The following is the recipe I ended up using. It is a variation of one I found online. Persimmon Bars Amount Measure Ingredient -------- ------------ ---------------------- 1/2 teaspoon salt 2 1/2 cups flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon cinnamon 3 eggs 1 cup sugar 2 cups persimmon pulp 1 teaspoon vanilla Combine salt, flour, baking powder and soda, and cinnamon. Set aside. Beat eggs with sugar. Add remaining ingredients and blend. Spread in two 7" x 11" pans. Bake 30 to 40 minutes at 325 degrees. Cut into bars. The bars end up about 3/4" thick. If you adjusted the baking time up a bit, you could probably bake it all in one 7 x 11. The recipe I started with called for nuts and icing, but the persimmon flavor is subtle and I was afraid those other flavors would overpower rather than complement the fruit. Michael |
