Default Where can I buy sweatbreads?

I live in Las Vegas which, whilke being one of the restaurant capitals of
the world, is a veritable desert when it comes to buying fine ingredients.
Can anyone offer a suggestion?

I may be wrong, but I have a hunch that many of the top star restaurants
in Vegas, in order to attempt to satisfy the insatiable appetite for
fine cuisine of their patrons, buy the whole lot before the animals are
even slaughtered.
