Default REC: Noodles Romanoff

I wing this

1/2 lb. shredded cheddar cheese, 2 cups egg noodles, cooked in lightly
salted water until just tender (about 8 minutes) and drained. Place the
noodles in a 2 quart serving dish and set aside.

Melt 2 Tbs. butter with a dash of salt and pepper in a saucepan and stir in
2 Tbs. flour. Add 1/2 c. milk or buttermilk and stir until smooth and
starting to thicken. Stir in the cheddar cheese and cook until the sauce is
nicely thick. Pour this sauce over the noodles in the casserole and stir
until well blended. Sprinkle with a little hot paprika and serve
immediately. Serves 4-6

There was a packaged noodle thing called "Noodles Romanoff" that enjoyed a
brief popularity many years ago. It held promise but was "icky". The name
was adopted for the following dish which fulfills the promise and is
definitely not icky.

1/4 cup grated sharp Cheddar cheese
1 tsp. salt
1/2 tsp. pepper
2 cloves garlic, crushed
2 tbs. butter
chopped parsley

Cook the noodles and drain. While the noodles are cooking combine the sour
cream, Cheddar, salt, pepper and garlic in a medium bowl. Put the drained
noodles into a serving dish and stir in the butter. Stir the sour cream
mixture into the noodles and sprinkle with the parsley. Serves 2 to 4.

Lipton or whomever makes the little packaged noodle mixes makes a noodles
Romanoff mix. a white/off white creamy sauce..<shrug> one of my favorites
to have with some grilled chops or whatever. Have no idea what the flavor is
actually..just kind of a generic noodles in a creamy sauce(not much
different from the stroganoff noodles, but sauce does seem to have a white
cheesy sauce..

Try this:

Noodles Romanoff

2 8 ounce packages uncooked wide egg noodles
4 cups sour cream
1 cup grated Parmesan cheese
2 tbs. Chopped chive
1 tsp. Salt (optional)
1/4 tsp. Pepper (optional)
2 large cloves of garlic crushed, or equivalent dried garlic
4 tbs. Margarine or butter

Preparation Steps

1. Cook noodles as directed on package.
2. Drain.
3. Mix sour cream, half of Parmesan cheese, chives,
salt, pepper, and garlic together in bowl and set
aside.
4. Stir margarine into noodles.
5. Stir in sour cream mixture.
6. Sprinkle with remaining cheese.
7. Serve from pan or platter.
