Default Sweet Potato Strudel question.

I tasted a fabulous sweet potato Strudel. I asked the owner of the restaurant
for the recipe. Believe it or not, he got the chef to write it down. But, there
was no quantities, he makes it without measuring.
I'll list the ingredients, can anyone give me a rough idea of the quantities to
use?

Sweet Potatoes (Roasted)
Nutmeg*
Cinnamon
Brown Sugar
Butter
Heavy Whipping Cream

Topping:
Oats
Sugar
Melted Butter

*I've heard people express a dislike for sweet potato pie because of too much
nutmeg. Could it be left out??

Believe it or not Emeril is preparing a Sweet Potato Strudel tonight on
Emeril Live...

Yes. You can always leave out spices, herbs, and extracts - or change them
to things you like. They are only there for flavor, not structure. I don't
see how you could make strudel from that ingredient list. Did you leave out
the phyllo dough or ingredients for strudel dough? It looks like the
topping would make this more of a "crisp" than a strudel unless the oats,
sugar, and butter are intended to be used as a "brusel" which is normally
made from butter, sugar, and bread crumbs and used to absorb excess liquids
from the filling and prevent the dough from becoming soggy.
