Default Basic Deepfry Question

I was a short order cook a long time ago, and it seems to me, I was
told never to fry onion rings with other foods, because the onion rings
would make everyting else smell and taste like onions? Can someone
clear this up for me?

Commercial fryers run hotter than home fryers. Above some
temperature the flavors get sealed in better.

Actually they don't... commercial fryers generally have quicker recovery rates
but temperature is well, um, temperature.

In my youth, having worked at a fast food joint, we kept a fryer just for
onion rings and fish. The wisdom being that fries and what not would absorb
those flavours from the oil
