Default Crock Pot / Slow Cooker Chicken

Hi all,

My roommate gave me a nice crock pot for Christmas. I have a small chicken
in the freezer and I'm thinking of doing something with it tomorrow for
lunches next week. Any tried and true suggestions for crock pot chicken?

Cheers,
Carrie

If the giblet bag was removed before it was frozen, you can put the
entire
chicken into the crockpot straight from the freezer. It will progress
through thawing to cooking during the day.

A simple recipe is to dice an onion, add a bay leaf, and pour a can of
cream of mushroom or golden mushroom soup over the whole chicken
in the morning and it will be done when you get home from the office.

I also like chicken cacciatorre done in a crockpot. Chicken parts,
diced tomatoes and such.

What Doug said. Chicken cacciatorri is always welcome on the table.
And it warms over very nicely.

I'm going to agree with that. Chicken cacciatorre is a particular
favorite here too. I can't think of anything else right off the top of
my head, but it's almost midnight so I'm not even sure my head's on top
of my shoulders.

Hi...Carrie...I know you asked for 'tried and true' recipes...but if you
fail to get one ...look into this 'Slowcooker' recipe site for 'Chicken'...

I have a Slowcooker myself and have only ever cooked one 'Whole Chicken'
recipe in it...I always feel a little 'nervous' about cooking a Chicken all
day at low temperature !...I love all that I have cooked in it !

Try these links for all kinds of info:

I have done a whole chicken in the crockpot with great results.

Take one whole chicken and coat the outside of it with your favorite choice
of spices. (I use McCormick Rotisserie Chicken Seasoning)
Wad up a few pieces of aluminum foil and place in the crockpot.
Place the chicken on top of the foil.
Cook on low for 4-5 hours or until the juices are clear.
Remove the chicken from the pot and let it stand for five minutes before
cutting up.
You will have one great juicy chicken. My family loves the chicken "roasted"
in this manner.

Great pork chops.
Here is a way to cook thick juicy pork chops in the crockpot.
Get some pork chops about an inch thick (at times, I cut a pork loin into
thick slices for this recipe).
Place on edge (yes, stand them on their edge) in the crockpot after
seasoning with salt and pepper.
Cover the top of the meat with a sliced onion.
Place pats of margarine or butter on top of the onions.
Cook on low for 5-6 hours.
I use the accumulated juices to make a gravy.
No tough chops here.

Nice website links. Another good one is
http://www.cookingcache.com/crockpot.html . Also, you can go to your
public library and look for crockpot cookbooks. The Fix It and Forget
It cookbook is great (I own it, as of this Christmas, before I was
checking it out regularly from the library) and also 101 Things to Do
with A Slow Cooker is pretty good too.
