Default dutch pancake with ham and cheese

Watching "$40 a Day" with Rachael Ray. In Amsterdam, she had what
looked like a really good savory pancake with ham, cheese (and
mushrooms??), but googling didn't turn up a recipe.

I guess it would use a non-sweet batter. What kind of cheese?

Anybody have a recipe?

Dutch of course LOL! Gouda or Edam will work very well.

Pannekoeken. Restaurants serving them are ubiquitous throughout
Holland. They are made both savory and sweet

There's a sweet recipe in the January 2005 issue of Sunset called
Baked Sunday Pancake.

Boy, it sure seems that the term "Pannekoeken" covers a wide spectrum of
pancake types. The Pannekoeken with which I'm familiar are not thin. They're
made by pouring batter into a skillet, adding some kind of filling (usually
apples), and baking until the pancake puffs up on the sides. "Heavy" is the
word which leaps most readily to mind when I think of them, although
"leaden" is a close second.

Since I didn't see the episode of "$40" which prompted this thread, I don't
know what RR's pancake actually looked like, so I can't speculate on how
light or heavy it was.
