Default Cream cheese in Scrambled eggs

I'm on that low carb wagon...So I eat a lot of eggs. I was paging thru a
cookbook and found a recipe that added cream cheese to scrambled eggs. I
thought I'd try that just for a change. Just dice (small dice) up some
cream cheese and add to the eggs, before whisking them up with the salt &
pepper and other seasonings.

Well I guess it was ok. Seemed to add a richness but wasn't quite good
enough to write home about. Not really what I was looking for.

Anybody else have experience with this or tips that might improve my
cream cheese and eggs efforts?

Cream cheese is good in an omelette! You just need to throw in something a
bit more bitter to counter act the sweetness of the sour cream; like
spinach. Give that a try.

Cream cheese is good in an omelette! You just need to throw in something a

I like eggs and cheese. I use cheddar or even mozzarella though. Goes good
with a nice crusty bread.

Do you have the book "365 Ways to Cook Eggs?" I used to see it in
Costco. It is available from Amazon used books.

Once, a long time ago, I melted cream cheese with a bit of
milk to make a sauce that I poured over two fried eggs. It
was really good, as I recall, and I'm not sure why I haven't
made it since...

Well, I haven't tried cream cheese but I like shredded Cheddar and chives in
my scrambled eggs. (Does Cheddar pass muster on a low-carb diet?)

Usually I have old cheddar and mushrooms mixed in with my scrambled eggs.
But the cream cheese called to me...and I had to answer.

On a side note, there's a good article about how to put food in scrambled
eggs in Cook's Illustrated this month. Mainly it discusses how eggs can get
watery after you add other food to them. This has never been an issue for me
because I like super dry eggs.

Whip the cream cheese first with an ounce or so of milk, use about a
tablespoon for four eggs, add some chives and/or bacon pieces and
scramble. Top with shredded Vermont Sharp cheddar after you flip it.

Melt it, mix it in well before cooking it. :-)

It does add a nice richness to the eggs and is better if mixed in well.

I usually use sour cream tho' if I'm going to do that sort of thing.

I like to use whipped cream cheese instead of block cream cheese, and I
like to add fresh chives. Or, you could use the flavored savory whipped
cream cheese that's out there, though I have to admit that I still
prefer fresh chives and plain whipped.

I think you are correct...something more than just the cream cheese
adds a bit more "oomph" to the eggs. I add in onions and a bit of
smoked salmon, too.

Well, you've probably seen this, which a number of people have
raved about. I haven't tried it though--and you might not be
looking for a sweet dish:

French Toasty Eggs

2 oz cream cheese
2 eggs
2 Tbls SF maple syrup
Cinnamon to taste

Soften cream cheese in micro safe bowl, 20-30 sec on high. Add
the eggs, and 1 Tbls of syrup, stirring to mix. This won't mix
completely, you'll have bits of cream cheese remaining. Micro for
about a min, then stir to break up any lumps. Micro until you
have a large puffy pancakelike result; about 1 min. Drizzle with
remaining sf syrup and sprinkle with cinnamon. This is from Dana
Carpender's cookbook and is as posted on one of my lists.

Sprinkle some of Penzey's Sunny Paris in with eggs before cooking them
and you'll have a nice treat. I also like to saute up some sliced
mushrooms in a bit of olive oil then drop in some eggs into the pan and
scramble them with the mushrooms.
