This is one of the dishes served at my birth family's Christmas Eve
supper (last night for Orthodox Christians celebrating according to the Julian Calendar). I wrote to a number of folks about the celebration and zxcvbob said I should post the recipe. I know you'll find it hard to believe, but it's really tasty. I'll post the whole story on my webpage for anyone who might be interested. It's quite long. Lima Beans and Prunes Dried lima beans (really, a half cup is probably enough) Soak in water overnight with a pinch of baking soda. Drain and rinse. Boil in water to cover. Stir often. DO NOT COVER THEM. These suckers will boil over the second you turn your back on them. They take a long time to cook. No, I don't know how long; been a long time since I've made them. Add water if they get too dry before getting tender. Add a little salt. Add water to make them almost creamy, then cut unplumped prunes in half and fold them in. What'd I tell you -- not much of a recipe. -- -Barb, <www.jamlady.eboard.com> More on 1-4-05 - Chicken Tortilla Soup, and Swiss Steak.
