I just switched from various teflon skillets - they just can't take the heat - to all cast iron. I'd forgotten the taste of scrambled eggs cooked in cast iron. TI'm sure it's not cooking temperature or evenness of heat. They have a better flavor. Maybe you've put your finger on it - a little iron gets in. Kathy |
