Hi There,
Anyone hae any good squash recipes to share? I don't particularly love squash, but was reading about the health benefits and thought I'd give it another try. I pick up a small acorn squash and another one that has flsh colored skin - don't know it is called. Please post any good recipes - or any at all - I don't have a clue how to prepare these...! |

Slice in half down the center, remove seeds, fill cavity with a mix of butter, cinnamon and a little raw sugar, and bake in the microwave in a covered corningware with some water added for steaming. Serve on the "half shell". A steamer also works well. To make a nice mashed squash, I'll cut it in sections, remove the seeds AND the peel, then place it in the pressure cooker on a steamer platform with about 1/2" of water, then bring up to pressure and pressure for about 15 to 20 minutes. Remove the now soft pieces and mash with butter and some grated jack cheese. Basically, they can be served any way you serve yams, and they also go well in pies as a substitute for pumpkin. Kat -- K. It was fantastic, and I never used to like squash much. |

I usually strart by finding a stble position foer it to sit in the oven. Then cut a plug from wherever the top turns out to be.. Scoop out the seeds. Sprinkle the inside with salt, and whatever pepper you have on hand. I find ground Aleppo pepper is nice with squash. Then it can be stuffed with various things. I just filled one with a mix of sweated chopped onion and ground turkey. I have also filled it with peeled whole garlic clove, and filled about half with olive oil. Not a recipe, but a quick cooking method: Pierce the skin in several places, microwave whole. When a fork goes in with minimal resistance it's done. Let it sit for a while, halve and remove seeds. In my 850w microwave it takes about 10 to 20 minutes, depending on the size and shape of the smallish (1 to 3lbs) squash I use. As good as any steamed or boiled method IMO. It does give up any roasted flavor from a conventional oven. -- Dave S Posting with TBird, If they keep trying, so will I ;-) |
