I lived in the Dominican Republic and one of the things they all seem to
cook is a chicken recipe cooked down in a skillet. I just loved it, but I have yet to find a recipe. I even bought a Caribbean cookbook, but it was not the same. All I know for sure is they had cilantro in it. Man my mouth is watering! Anybody know what I am talking about? Or, how it is prepared and seasoned? Just grasping at straws....... -- Just Brew It! One site with a collection of recipes, including Dominican chicken, is: www.dominicanrepublicpage.com/cookingrecipes. Suggest googling "dominican chicken" to check out the various recipes for the one that is closest to what you remember. Mac |

The recipe I am looking for is very simple. It is pretty much just a chicken cut up and cooked down in a skillet. It is the way it was seasoned that I am looking for. It is the recipe the poor people make almost every day all over the Dominican Republic. At least when they have chicken anyway. I will keep looking. Thanks -- Just Brew It! From: http://tinyurl.com/4tanj Caribbean Grilled Chicken 35mins plus marinating Serves 4 Ingredients 180ml/6fl.oz. Vegetable Oil The Juice of 3 Limes 6 Garlic Cloves, chopped 1˝ teasp Black Pepper 1 teasp Hot Pepper Sauce 3 teasp freshly chopped Oregano 1 Bay Leaf, crumbled 1˝ tbsp Freshly Chopped Coriander 4 Large boneless Chicken Breast Instructions: 1. Place the oil, lime juice, and seasonings in a bowl and mix well. 2. Place the chicken in a shallow dish and pour the marinade over the chicken. Mix to coat well then cover and refrigerate for 2 to 3 hours. 3. Preheat the grill to hot and cook the breasts for 12-15 minutes on each side, basting with the marinade from time to time. Serve hot. |
