Default REC - Hashbrown Casserole

Crash and I doctored the Cracker Barrel clone of this dish to suit our
tastes. If you like this kind of thing, you may just fall in love with
this recipe. And see? I didn't even call it hotdish. <G>

Damsel's Hashbrown Casserole

Recipe By amsel in dis Dress
Serving Size : 0 Preparation Time :0:00
Categories : breakfast/brunch casseroles
potatoes side dishes


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 stick butter
1/2 teaspoon freshly ground black pepper
1/2 cup onion -- minced
1/4 cup green pepper -- minced
10 1/2 ounces cream of chicken soup, condensed
2 cups Colby cheese -- shredded
2 pounds hash browns, frozen -- thawed
Topping:
1 cup Colby cheese -- shredded
1/2 pound bacon -- partially cooked,
drained

Preheat oven to 350 degrees. Spray a 9x13 pan generously with non-stick
spray, or use butter.

Combine all ingredients, except potatoes. Blend well. Gently mix in the
potatoes, and pour into prepared pan. Bake, uncovered, at 350 degrees for
50 minutes.

Sprinkle Colby cheese and chopped bacon on top of casserole and return to
oven for 5-10 minutes, on broil.

Glad to see you've gotten through that nudity phase. This looks like a
nice dish and I think I'll try it this week. Sounds good with sausage?

Well, actually .... I'm in mid-hot flash, and there's no dress in sight.

Yeah, the casserole would be great with sausage. It's very versatile.

Good with cubes of ham throughout, too, and some
kind of cooked veg--broccoli, asparagus, even peas.
ALso good with frozen Potatoes O'Brien instead of
hashbrowns.

You people are determined to get me to thaw that ham, aren't you? We went
on a meat-buying spree, and have a whole ham in the basement freezer.

Dammit, I want ham! (it'll take about a month to thaw)

I'm not really a ham person but I do admit enjoying it once in a while.
But I'd prefer a pork roast only there's a problem with todays 'new
pork' meaning 'extra lean'. I love to make crackling and without a slab
of fat, well it's a no go.
