Crash and I doctored the Cracker Barrel clone of this dish to suit our
tastes. If you like this kind of thing, you may just fall in love with this recipe. And see? I didn't even call it hotdish. <G> * Exported from MasterCook * Damsel's Hashbrown Casserole Recipe By ![]() Serving Size : 0 Preparation Time :0:00 Categories : breakfast/brunch casseroles potatoes side dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 stick butter 1/2 teaspoon freshly ground black pepper 1/2 cup onion -- minced 1/4 cup green pepper -- minced 10 1/2 ounces cream of chicken soup, condensed 2 cups Colby cheese -- shredded 2 pounds hash browns, frozen -- thawed Topping: 1 cup Colby cheese -- shredded 1/2 pound bacon -- partially cooked, drained Preheat oven to 350 degrees. Spray a 9x13 pan generously with non-stick spray, or use butter. Combine all ingredients, except potatoes. Blend well. Gently mix in the potatoes, and pour into prepared pan. Bake, uncovered, at 350 degrees for 50 minutes. Sprinkle Colby cheese and chopped bacon on top of casserole and return to oven for 5-10 minutes, on broil. - - - - - - - - - - - - - - - - - - - Per serving: 4524 Calories (kcal); 336g Total Fat; (66% calories from fat); 179g Protein; 203g Carbohydrate; 788mg Cholesterol; 9158mg Sodium Food Exchanges: 12 1/2 Grain(Starch); 20 1/2 Lean Meat; 1 1/2 Vegetable; 0 Fruit; 54 Fat; 0 Other Carbohydrates -- "Years ago my mother used to say to me... But I'd prefer a pork roast only there's a problem with todays 'new pork' meaning 'extra lean'.
