Default 00 Flour

Does anybody know of a reasonable substitute for 00 flour? I've heard you
can mix cake flour with all-purpose flour and get a reasonable substitute?

It depends on what you are making 00 flour has to do with the "grind" (very
fine like talc) and not the protein content.

Try the King Arthur Flour catalog. They used to sell
00 flour, but I don't have a current catalog to check
if they still do.
