Default Greek Karithopita (nut cake)

From a dear friend - His wife's recipe.

Greek Karithopita (Nut Cake)

15" Round Pan

16Extra Large Eggs (18 If large)
1 1/2Cup of Sugar
1 1/2Sticks of Butter ( 2 if Desired) Melted and Cooled
4tsp. Cinnamon
1 1/2tsps Ground Cloves
3tsps. Baking Powder.
18Pieces of Zwieback ( or If Nabisco; 1 Box 24 Pcs.)
2 Cups of Walnuts Ground. Fine( 8 Oz.)
2 1/2Cups of Almonds Ground Fine (12 Oz.)
1 1/2tsps Vanilla
1/4tsp Cream of Tarter.

Method:
Measure nuts before grinding. Grind Zweiback and nuts fine. Blend Zweiback,
nuts,spices
and baking powder together. Separate eggs yolks from the egg whites.
In a mixing bowl, beat egg yolks with sugar until creamy and thick.

Remove to another bowl, then clean and dry the mixing bowl thoroughly.
Return this to the mixer and
attach the beaters to now beat the egg whites. Beat the egg whites on slow
to medium speed until
they become frothy. Now add the cream of tatar and then beat them on high
speed until they become stiff.

Fold egg yoke/sugar mixture into the stiff beaten egg whites. Then carefully
fold in the dry
ingredients a little at a time folding them into the egg mixture slowly DO
NOT OVER MIX
at this point. The batter will look a lot like a cheesecake batter before
baking.

Pour into a well-buttered pan. Bake as a cake, testing for doneness by
pressing finger to see if it
springs back. Bake at 350 degrees for about 40-45 minutes

SYRUP
3Cups of Sugar
2 1/2Cups of Water
3Cinnamon Sticks
7Whole Cloves
1/2Orange and Juice ( Squeeze Orange half and then put it in pan , rind and
all.

Boil, spices sugar and water. After five minutes or less(until sugar is
melted thoroughly)
and orange and juice. Cook until a drop on a spoon or thumbnail does not
fall off easily.
Pour warm syrup over the warm Karithopita
After cooling cut into diagonal or square pieces about 2" in size.


Alternate;

11" X 14" Pan

12Eggs, (6 large and 6 Extra large)
1Cup of Sugar
1Stick of Butter; Melted and Cooled
3tsps Cinnamon
1tsps Ground Cloves
3tsps Baking Powder.
12Pieces of Zweiback ( or if Nabisco 3/4 box 18 Pcs.)
1 3/4Cups Walnuts Ground Fine
2Cups Almonds Ground Fine
1tsp. Vanilla
1/4tsp Cream of Tarter
