There are several recipes in the archives, one with a lot of celery sounds very good. Be careful to pick all the shot out of the bird when you clean it. Biting down on one is not an experience you want to add to your hunting fun.... -aem |

Wrap pheasant in bacon, brown it in a skillet, transfer to a crock pot, with carrots, mushrooms, celery and onions, 2 cups chicken broth and 1 cup white wine, cook on high one hour, then on low for about 6-8 hours (depending on size of bird). Remove broth to a pan, reduce significantly, and thicken with flour or corn starch to make a gravy (may need to add a little butter or margerine). Serve with veggies and wild rice pilaf. -L. |
