Default Euro Carp prep and cooking

On a S.Aust resources website I learnt that large quantities of European
Carp are being sold to Restraunts nationally and a healthy export market is
developing .
Does anyone know how the restraunts are preparing and cooking these fish . I
did a few experiments and failed dismally.
