Default Sandwiches for bridal shower

I'm hosting a bridal shower in a few weeks, and have decided to make
small sandwiches, along with some sort of salad, and a veggie/fruit
tray. Maybe some crackers & cheese.

I'm thinking a chicken salad sandwich, but I really need a recipe that
would be loved by anyone. Not too spicy, not too bland. I once worked
at a deli that had the most wonderful chicken salad sandwiches. Anybody
have a good recipe? Or maybe something else that would be easy to
prepare, but also a crowd pleaser?

Also, some salad suggestions?

I'm talkin easy here too. I'm hosting this myself & don't forsee having
any real help from anybody else.

Thanks!

AShower menu. I suggest a chicken salad (mayo, walnuts, fruit chunks
pineapple, peach, strawberries. Chicken sandwiches rolled (without
crusts) with chicken bits rolled up with watercress and mayo.
DElicious. But you must offer a delicious chocolaty dessert. Use your
imagination

Denise, I've posted my chicken salad spread here more than once. It's
not a "measured" recipe, though. Done in a food processor, things get
well chopped up but not to a puree. Cooked chicken pieces, some celery,
some onion, seasoning, and mayo to bind. I put the chicken, celery (in
1-inch pieces), and onion (small chunks - not too much) in the fp and
pulse process until it's chopped, then transfer to a mixing bowl and
add mayo to bind. You could sprinkle in some tarragon along with salt
and pepper to taste. Sorry it's not more precise.
I'm thinking that this version (without big chunks of meat) will say
together better in a dainty sandwich.
How about putting the salad mixture in croissants instead of plain bread.

Ohh, also sounds yummy.

Crossants sound good too. I wasn't sure what type of bread that I
wanted to do.

Thanks!

I think an assortment of "tea sandwiches" would be in order.

Thanks, It's a good tip, and I had thought of something like this but I
think for my situation I think itt would be alot of work and alot of
ingredients which ends up being alot of $$ :-)

I also wanted something a little more filling as it will be around
lunchtime with some people probably traveling across the state to attend.

Also, I don't know why I wrote Bridal, It's a Baby shower.
That's what I get for posting so late at night! ;-)

*sigh* Dimitri beat me to the punch and he even had some links too!

But, now that I see its going to be a baby shower and not a bridal shower,
why not put out some meat, cheese and veggie platters and let everyone make
their own little sammiches? Who knows what the Mother-to-Be will actually
want to eat.

Some good wine (only 1 glass for the MtB!), good rolls and you have
something going there.

But, I'm a guy so may be totally off the whack here.

But not everyone likes chicken salad no matter how good the recipe.

You know, I had thought of this too. We'll see. My family almost
always has this type of thing for get togethers. I guess I was trying
to think of something "different".

Um, Yeah!

Actually, My Aunt made Mimosas for my other cousins baby shower. Yum.

I made Virgin Pina Coloada punch last year for my husbands birthday & it
was just like a Coconut/Pineapple punch. Pretty tasty. I s'pose that
*could* be the punch for this party and whoever want's could spike thier
own glass with a jigger of rum? Too weird?

Some people freak at meat salad sandwiches - because of the mayo and
because of the fat content (don't ask me why).

I often make wraps with various things in them - some veggie only, some
ham + cheddar, some turkey + provolone. If you use a large burrito
wrapper (flour tortillas), you can make a pretty hefty wrap, wrap it in
foil and cut it in half which is plenty for most people, and they
present well. Last time I made them, they were snarfed up before I
could even taste one. You can make them ahead and stick them in the
fridge.

For the Ham, I used applewood-smoked cheddar and bacon cheese spread,
ham, medium cheddar cheese, lettuce, and tomato. I made some on tomato
tortillas, some on plain.

For the Turkey, I used garlic and chive cream cheese spread, turkey,
provalone, lettuce, avacado and some with tomato. I put some on
spinach tortillas and some on plain.

For the Veggie, I used avacado, the two cheeses, lettuce, tomato, black
olives and thin slices of marinated (Italian dressing) grilled zuchini
and portobella mushrooms (The day before I assembeled the wraps, I
marinated them an hour or so, and grilled them on my George Forman.
Drained thme and chilled them). I made some wraps with cheese and some
without (Vegan). All on plain tortillas.

I always make a little card that tells what is in each and then serve a
good mustard, and mayo on the side.

I'm partial to a good pasta salad or potato salad. My pasta salad is
cooked pasta, fresh tomatoes, black olives, green and red peppers,
carrots and celery, Italian dressing, celery seed, freshly ground black
pepper and a little pressed garlic. make it the day before and let it
sit overnight in the fridge - it's better the next day. Serve with
freshly grated parmesan and crusty bread.

I recall a bridal shower I went to years ago when I was a kid. The
sandwiches were cut into pretty shapes and were different colors. I
think some commercial cheese spread was inside them. I was very
impressed, as they seemed so fancy.

Ham salad sandwiches might work. For chicken or ham salad, I like to
grind the meat to a fine mince, sort of like devilled ham. For ham
salad I chop up a few sweet pickles for the mixture. In both spreads,
I like to add some prepared mustard. I usually leave onions out as
they can get too strong after the mixture sits for a few hours.

What did they do at the deli to make their sandwiches so good? Maybe
you would like to duplicate them.

My first thought was a Waldorf salad, but that may be too much mayo
with the sandwiches and all. If you have a fruit/veggie tray you might
not need a salad.

Quite often when I put on a "do," the meat and cheese trays go over
well. Just supply the meats and baby rye breads, other breads and
crackers and condiments and there is nothing left later. I usually
serve ham, beef and turkey.

Something that always goes over well and is little work is that Knorr
spinach dip in a bread bowl. The recipe is on the box of the Knorr
vegetable soup. I think my husband could eat a whole batch of that by
himself.

Now, Ed! She's not up for offering a buffet here. And Lady's Shower
food is usually a Light Lunch -- fancy sandwich, maybe; or salad; some
fruit, maybe some veggie sticks and a pickle; and dessert. They don't
have to like the chicken salad all that much -- all they have to do is
eat it. :-) She could expend way more effort and time than she has
available to decide on and prepare something that will be loved by
everyone -- and then someone would announce they're dieting and not
having that anymore, thank you.

Oven roasted pork shoulder, pulled, and mixed with mild barbecue sauce
(aka "Pulled pork barbecue, but it's
not barbecue cause you made it in the oven.)

Spinach salad with orange or grapefruit sections, sliced red or sweet
onions, and a vinagret.

But chicken salad sounds good too. Make a small batch ahead of time to
get it right.

I've never freaked out because of mayo or fat
content. I'm more leery of a good chicken salad
having been ruined by miracle whip, or added egg
or pickle or the use of slimy meat that isn't very
recognizable?
I love chicken salad otherwise.

OK, These sound really good too. Maybe I'll make a couple of these
since they seem *really* easy to make, then there will be a choice
instead of just chicken salad sammiches.

Thanks!

I would think a pulled pork sandwich would be a little messy for a dressed
up bridal shower; but that's just me.

For a nice party look I make a nice chicken salad and ham salad and buy
little cocktail size cream puffs from the bakery and stuff them with
the sandwich fillngs. I think a smoked salmon salad stuffing would be
stunning. Good luck.
