Hey all,
I'm looking for a great Portuguese Bean Soup. I googled it and came up with 70k hits. I think that's a bit much to wade through so I thought I'd take a different path and just ask here... So, with that being said, does anybody have a recipe for Portuguese Bean Soup they really like? You only get those with the full name instead of every p. and every bean and every soup. Thus, <recipe "portuguese bean soup"> got 1,290 hits. hth -aem |

After years of getting ****ed off at the results (and not reading the online help), I never put much faith in the search engines. Now I know it's my own damn fault. Who says you can't teach and old (40) dog a new trick? Hello
Joyce Goldstein's Book "Savoring Spain and Portugal" has a nice bean soup called "Sopa de Pedra (Stone Soup). The beans are the "stones". I have included a précis of the recipe below. Ingredients include, presoaked dried red kidney beans (1 cup), olive oil (3 Tbl.), chopped yellow onions (2), chopped garlic cloves (2), 1/2 lb. piece of bacon, 1/4 lb. chorizo, diced boiling potatoes (4), diced peeled carrots (4), small head Savoy cabbage (shredded), peeled and dices turnips (2), diced plum tomatoes (2 cups), bay leaf (1), chicken stock (8 cups), fresh chopped cilantro (1/2 cup). Basically the recipe puts the beans up to boil, then sautés the onions and garlic in olive oil. After 10 minutes add the chorizo and the bacon, then the rest of the vegetables (except the cilantro). Add the stock. Bring to a boil, then turn the heat low and simmer for 30 minutes. Discard the bay leaf, remove the meats, and cut them up. Return the meats to the pan, then add the beans and the cilantro, and simmer for 5 minutes or so. Serve.. This recipe may or may not be what you wanted. In fact it could be Spanish as well as Portuguese. At any rate it would seem to be a good soup for a cold rainy night - or any night.
