Default what's the name of the orange stuff with pasta?

what's the name of the orange stuff with pasta? i thought it might be
tomato source but that is red. I had a friend that made great pasta
with this orange stuff. It was a sauce of some kind that made the
pasta go down nicely.

A cheesy attempt at humour, what? Powdered cheese-type food, with
(probably) Food Dye Red No. 7.

This link, <http://www.jagson.com/food_colors.htm>, will take you to a
chemical company's page that shows food dye colours and names. Kinda
weird.

Do you mean, Vodka Sauce? It becomes orange in color when tomato sauce gets
addition of cream and vodka.

I used to take pasta with a dry Knorr sauce mix for backpacking. I believe
the name of it was "pasta rosa," a sort of alfredo saice with dry tomato in
it. It's sort of a pale orange.

Also, if you take a red sauce and add heavy cream to it, it can sometimes
look orangy.

It might have been ParmaRosa:

Basic tomato sauce

1 to 2 lb. of ripe tomatoes, peeled (amount depends on amount of pulp)
or,
1 can peeled Italian style tomatoes (Progresso is a common brand)
2 tablespoons olive oil
1 clove garlic, crushed
1 leaf basil
Salt and pepper

Heat the oil and cook the garlic until it is soft, not brown. Add the
tomatoes and basil then simmer, stirring occasionally. Add s & p to
taste. Should be done in about 1 1/2 hours. When finished, run
through a colander or sieve.

Next, make the white sauce:

Besciamella (white) sauce

1 tablespoon butter
1 heaping tablespoon flour
1 cup milk, hot (don't boil)
nutmeg
salt and pepper

Melt the butter in a sauce pan. Add the flour and stir into a cream.
Don't brown, but it must cook. Add the hot milk slowly while stirring.
Sauce should be smooth. Add s&p to taste and scrape about a pinch of
nutmeg into it. Simmer about 15 to 20 minutes.

When both sauces are done stir the two together and you have "Parma
Rosa".

Emeril has a new sauce on the grocery shelf that is definitely orange. It is
labeled "Vodka Pasta Sauce". The ingredients lists vodka. Passed it by
because one of my guests is a recovering alcoholic.

Since no one's mentioned it, I'd like to submit that I've made sauces
based on roasted, peeled pimientos, and they come out a bright orange.

definitely wasn't salmon roe - too expensive!! This was something I
saw a student having. Whatever it was, it wouldn't have cost more than
a few dollars. I tried it too, it wasn't anything fancy or alcoholic.

Gotcha. But vodka sauce is not fancy nor very alcoholic. Cheap.
