Default Can "Herman" sourdough be used before required time?

This is a repost of previous one. I didn't word the original one as a
question which was probably the reason for no reply.



My wife started a Batch of the "Herman" sourdough. She wants to bake a
coffee cake for Easter. However the elapsed time until it's ready for
use won't be up until Easter Day. Can she bake this cake before the
waiting time is up, and if so, how many days ahead of the ready date
can it be done??

All of the recipes that I have seen using this kind of 'starter', include
either yeast or baking soda--so your coffee cake isn't dependent upon the
Herman for rising power. You should be able to use the Herman before you
have completed the sequence.
