1) Lazy dal (once again -- one cup lentils, three cups water, a glob
of jarred curry paste, some salt -- I squeezed half a lemon over it at the end this time) 2) Potato Medley This was so easy and pretty. I liked it with the dal poured over the potatoes, too. The plantain gave it an odd sweetness, but not in a bad way. 1 sweet potato, diced 2-3 white potatoes, diced 1 onion, diced 1 plaintain, diced, optional 3 T oil and/or vegan margarine, and/or a combination of the two salt and white pepper to taste 1 tsp paprika 2-4 cups chopped greens (used flat mustard greens this time) Put everything but the greens in a covered, non-stick pot over medium-low heat. Stir every 5-10 minutes, until the potatoes are starting to fall apart and the sweet potatoes are done. Uncover. Add the greens. Stir until the greens are just wilted. Serve. serene |
