Well this was pretty impromptu.
I made some candied orange peel a little while ago. When I took the peel out of the slow cooker, I looked at the cups of syrup I had remaining and decided to do something with it. Draining it off, I cooled it and tasted a sample. Very sweet, and it had more the *aroma* of orange than the *flavor*. Still quite nice. So I juiced three oranges I had and added the juice, plus some water, and about 1/4 cup lemon juice (to cut back on the sweetness). Chilled the mixture, then put into an ice cream maker. Tasty, though I'd like to cut the sweetness further. I'm going to see if I can still find some sour oranges to juice. I think it should work if I melt then refreeze the sorbet--you don't get the same texture problem because of the ice crystals that you get with melted ice cream. -- to respond (OT only), change "spamless.invalid" to "optonline.net" <http://www.thecoffeefaq.com/> |
