Default Happy Easter - & Comfort Food

First a very happy Easter to all who celebrate.

Second - This morning the German cabbage went on about 5:00 AM simmering
with the caraway seeds, The beans have been baking all night and I finished
the first round on the green beans. Ralph the 19 pound ham will go in later.

The smell is wonderful. I commented how it smells like a holiday. The boss
said "Comfort Food!" Of course she's right.

So, what is the "comfort food smell for you?

Ralph's twin brother, Richard, is going to have to cool his heels in the
refrigerator for a day or two (or three). The Easter Bunny brought me a
bad cold and a case of shingles.

Holiday food *is* comfort food, at least to me. Some of my best food
memories.

German cabbage? Details please! I love cabbage and have one in the
crisper.

What kind of baked beans?

How many rounds are there to the green beans?

You can see at the moment that I have nothing to do but ask questions, but
I'd really like to know. <g>

Comfort food smell to me is Dad's Navy Bean soup (made with hocks or a meaty
ham bone). A close second would be Mom's Chicken N' Biscuits (creamed
chicken ladeled over biscuits). Neither of which I'm having today. (sigh)
I had planned to do stewed lamb shanks with leeks but the lamb was rancid.
I'd had to ask the butcher if they had any and he brought me out two, vacuum
packed. I stuck them in the freezer a month ago. Thawed them on Friday;
opened the package last night and EWWWWW. SOUR, rancid, nasty! And too
late to take them back. So, today I'll have tattie-leek soup rather than
lamb & leek stew. That's okay, I like potato leek soup

I hope it does. My father in law had a nasty case a few years ago - I

Hot cross buns warming in the oven -- spicy yeasty goodness.

Roast lamb and veggies (must do that tomorrow).

I think for me the first on the list would be a roasting turkey, complete
with sage dressing. Nothing says holiday like the smell of celery and onions
sautéing in hot butter! lol

Sorry to hear that, Carol. It's lousy to feel ill over a holiday. I can

I'm sorry, guys. I didn't intend to hijack the thread. I'm fine, and
we're about to eat a re-heated deep dish pepperoni pizza for dinner. I'm
thinking we'll have ham on Tuesday. And Wednesday. And Thursday. And I'm
going to bring some up to Barb Schaller's on Friday.

Hope you're on the mend, Dams! My mother went to the ER with shingles a
few years ago. She hasn't had a relapse to date (knocking on
particleboard).

This has been a cooking/baking/eating sort of weekend. Started off on
Friday by making hot cross buns. The recipe I used (from King Arthur's
200th Anniversary Cookbook) made a boatload, so I sent the SO to work
with some of them. Saturday we ran errands and ate at a Salvadoran
restaurant for lunch, then a Cambodian noodle shop in the International
District for dinner (see my post on seattle.eats for details). We had
dessert that night at the neighbors', which meant we foisted hot cross
buns on them. We had brunch yesterday at said neighbors' house--quiche
and homemade cinnamon rolls. Our contribution was a last-minute gemisch
of strawberries and kumquats, spiked with Grand Marnier and crystallized
ginger. Dinner was a small pork loin rubbed with garlic and rosemary
(see How to Cook Everything, p. 464) with mashed sweet potatoes, steamed
cauliflower, and some mango salsa on the side. I may have to hike up
and down Mt. Rainier a few times to work these excess Calories off.
(Fortunately, it is my spring break--now if the weather cooperates...)

Happy Easter Plus one to all.

For me, comfort food smell like delicious baked goods in the oven,
especially bread, or gingerbread. A close, close second is that
wonderful smell of roasting turkey at Thanksgiving.

Easter Dinner last night was a small, deboned leg of lamb (Lots of
delicious leftovers!) roasted medium rare, new potatoes and onions
fried in olive oil until tender inside and crusty and brown outside,
and asparagus. Lamb, as opposed to ham, is my family's idea of Easter
dinner fare. I almost got rack of lamb instead, but the roast didn't
cost much more, and there was a lot more to go around for us all. I put
lots of garlic slivers in the meat, rubbed some crushed garlic and a
little good balsamic vinegar and some salt and fresh ground pepper
over it, then seared it at 450 for the first 15 minutes, then turned
the heat down to 350, and cooked it for another hour and 15 minutes. It
was a perfect, tender pink roast inside. I drained off the fat, then
made a reduction of the pan juices with some white wine which we served
over the meat. (Perhaps I should have used red, but there wasn't a
bottle of red wine open, and nobody minded, anyway.) There were just
my mother, her lover and I at the table, but we all agreed it was
delicious. =o) We had ginger shortbread cookies for dessert. None of
us had the energy for ice cream with strawberries and chocolate sauce.
