Default REC: TNT Microwave Fried Chicken

I don't know if you can still find microwave browning skillets, I have
a large Nordicware skillet, which I use. I developed this recipe on a
hot summer's day when I didn't want to heat up the kitchen. The
chicken is fried but not crispy.

Microwave Fried Chicken

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 pounds chicken pieces -- skinned
1 1/2 cups flour
2 teaspoons salt
2 teaspoons paprika
1 1/4 teaspoons pepper
1/2 cup milk
2 tablespoons corn oil

Rinse and pat dry chicken pieces. Combine flour, salt, paprika and
pepper. Roll chicken pieces in flour mixture. Dip chicken pieces in
milk and roll again in flour mixture. Preheat microwave browning dish
6 minutes. Pour in corn oil and tilt browning skillet to distribute
oil. Add chicken pieces, meaty sides pointing out. Microwave at High
for 6 minutes. Turn chicken over and cook on High for another 6 to 8
minutes, or until chicken is tender and juices run clear. Remove
pieces as they are done and continue cooking until all chicken is
fully cooked. Serves 4.

Nice to know but our Wallyworld does not have the skillets --- not even
the large one like mine --- any more. The store quit carrying most
microwave cooking stuff about five years ago. Don't know if Nordicware
online is carrying them either. I guess I could check.
