This recipe was posted in rfc about 3 yrs ago. I lost my copy and have
been searching for the recipe. I found it thru Google. A delicious soup, the recipe for which was first published in Bon Appetit in Dec 2000. 1/2 cup long-grain rice 2 Tb olive oil 2 3/4 cups chopped onion 4 garlic cloves, minced 2 bay leaves 5 14 1/2 oz cans beef broth 1 28 oz can diced tomato, with juice 1/2 cup chunky tomato salsa, med hot 1/2 cup chopped fresh cilantro 6 Tb yellow cornmeal 1/4 cup whole milk 1 large egg 1/2 tsp salt 1/2 tsp ground pepper 1/2 tsp ground cumin 1 lb ground beef 1/4 lb bulk pork sausage Heat olive oil in deep sauce pan Add 1 3/4 cups chopped onion 2 garlic cloves 2 bay leaves Saute 5 minutes. Add broth, tomatoes and juices salsa 1/4 cup cilantro Bring to a boil, cover, and simmer 15 minutes. Combine everything else except the rice beef, sausage, cornmeal, milk egg, s & p, cumin, 1 cup onions 2 garlic cloves, 1/4 cup cilantro mix thoroughly form mixture into meatballs, about 1 1/4 inch in diameter Add rice and meat balls to soup. Simmer about 20 min. Ladle into bowls. I discovered that my dtr loved fresh cilantro, so the 2nd time I made the soup I added another 1/2 cup chopped cilantro, half in the soup and half in the meatballs. Terrific.
