Back in 1963 Gourmet published "Gourmet's Menu Cookbook" that contained a
recipe for a wonderful chocolate cheesecake that was to be decorated with
candied violets. Failing a source to buy them, I undertook to make my own.
The results were wonderful; the process tedious. Since then, when I've made
the cheesecake, I've managed to buy the candied violets.

I found a baker's supply shop that sell's at least 8-10 types of candied
flowers. I think the prettiest are the candied pansies.

Thanks for the link. Wish I knew about this site because I made 75 gum
paste roses for my parent's 50th anniversary cake. It took 12 hours
work, hey I'm slow, but the cake turned out beautiful.

That's still expensive, but more affordable and a better trade off to
doing it yourself. Hmmm. I wonder if we have a source around here?
I doubt it though, because I don't see that kind of pastry decorating
done locally.

If doing it oneself, anothe issue is find the right flowers at the right
