Default PING: Dog3

Michael, bake a batch of these muffins, cool well, then wrap individually
in plastic wrap and freeze. They're pretty healthy, so pull one out,
thaw, and eat one for a treat.

Cranberry Bran Muffins

Recipe By :
Serving Size : 12 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/4 cups all-purpose flour
1/2 cup Splenda Blend
1 tablespoon baking powder
1/4 teaspoon salt
2 cups Kellogg's® All-Bran® cereal
1 1/4 cups fat-free milk
1 egg (or equivalent egg substitute)
1/2 cup unsweetened applesauce
1 Cup Fresh Cranberries -- coarsely chopped
1/2 Cup Sultanas or golden raisins
1 teaspoon grated fresh orange peel
1 Teaspoons Mixed Spice
1/4 cup chopped pecans (optional)

1. Stir together flour, Splenda, baking powder and salt. Set aside.

2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and milk. Let
stand 3-4 minutes or until cereal softens. Add egg and applesauce. Beat
well. Stir in cranerries, orange peel and pecans. Add flour mixture,
stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-
pan cups coated with cooking spray.

3. Bake at 400° F about 20-25 minutes or until lightly browned.
Yield: 12 muffins

LOL! Yes, do make these; they're delicious! I love cranberries and freeze
many bags of them when they're in peak season. They're actually pretty
healthy, too. My adaptation of Kellogg's original recipe.

Oops, sorry. That's a Brit thing. You can make up a batch to have on hand
and store the remainder for other uses like pumpkin pie (much better than
"pumpkin pie spice"), or you can substitute what you like; e.g., cinnamon
and nutmeg.

British Mixed Spice

1 teaspoon Cinnamon
1 teaspoon Nutmeg
1 teaspoon Mace
1 teaspoon Allspice
1 teaspoon Cloves
1 teaspoon Ginger
1 teaspoon Coriander Seeds

Grind all spices in a spice mill until a fine poweder is obtained. Store
in a tightly sealed jar.

Description:
"Use in Pumpkin Pie, Mincemeat Pie"

We bought 10 bags of them when the store was getting rid of them for next
to nothing. I talked to Crash about your recipe last night. He's not
crazy about bran muffins (like, he won't even sample one).

But I found out that he's never had cranberry bread. I'm going to make
some of that, too. I'll post the recipe when I can. Mom didn't specify
pan size, so I'm just going to have to take my chances and report back on
the results.
