Michael, bake a batch of these muffins, cool well, then wrap individually
in plastic wrap and freeze. They're pretty healthy, so pull one out, thaw, and eat one for a treat. * Exported from MasterCook * Cranberry Bran Muffins Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 cups all-purpose flour 1/2 cup Splenda Blend 1 tablespoon baking powder 1/4 teaspoon salt 2 cups Kellogg's® All-Bran® cereal 1 1/4 cups fat-free milk 1 egg (or equivalent egg substitute) 1/2 cup unsweetened applesauce 1 Cup Fresh Cranberries -- coarsely chopped 1/2 Cup Sultanas or golden raisins 1 teaspoon grated fresh orange peel 1 Teaspoons Mixed Spice 1/4 cup chopped pecans (optional) 1. Stir together flour, Splenda, baking powder and salt. Set aside. 2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and milk. Let stand 3-4 minutes or until cereal softens. Add egg and applesauce. Beat well. Stir in cranerries, orange peel and pecans. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin- pan cups coated with cooking spray. 3. Bake at 400° F about 20-25 minutes or until lightly browned. They're actually pretty healthy, too. My adaptation of Kellogg's original recipe. We bought 10 bags of them when the store was getting rid of them for next to nothing. I talked to Crash about your recipe last night. He's not crazy about bran muffins (like, he won't even sample one). But I found out that he's never had cranberry bread. I'm going to make some of that, too. I'll post the recipe when I can.
