Default Scrambled Egg

Anyone have a fave recipe for scrambled egg with truffle/ and/or hollandaise
sauce, and/or smoked salmon???
Need an indulgent breakfast dish, for a special occasion.

You can't go wrong with smoked salmon and eggs, a perfect combination.
We like them the very slow-cooked way with big soft curds, slightly
underdone, rather than omelet style. For this you want lots of butter
and the salmon in quite small pieces. Garnish with plenty of chopped
chives, no sauce necessary. Serve English muffins with cream cheese
and an assortment of jams/jellies. If you can find a good big fresh
tomato, a lightly fried thick slice of that matches up particularly
well. Consider a flavored coffee--maybe hazelnut Kona. -aem

A local restaurant has an interesting variation of Eggs Benedict on their Sunday
breakfast menu. They use Smoked salmon in place of the peameal bacon.
In case you are not familiar with Eggs Benedict, it is English Muffin, a slice
of cooked peameal bacon (or Canadian Bacon or English Bacon), with a poached egg
and some Hollandaise Sauce. In this case, use the smoked salmon (Lox) in place
of the bacon.

My favorite is a combo of the benedict and he florentine.....

i use the english muffin for the bottom
then a glob of creamed spinach
then s few sliced of smoked salmon
then the poached eggs
then the hollandaise sauce

YUM DOUBLE YUM!

Maybe it's time to give that another try. I had Eggs Florentine once when I
was about 12 years old. We were visiting a neighbour's son at university and
had lunch in the cafeteria. It's probably the worst kind of place to eat
something like spinach, which can be quite good if properly cooked, and
horrible when overcooked and served soggy.

I've said it before, I'll say it again: I love an omelet containing
spinach, crumbled bacon and brie Give it a shot!

Tks for that. Probably if u use enough butter the hollandaise is not
necessary.

You could also try this:

SmokedSalmon and asparagus Quiche

1 pie shell
4 oz smoked salmon, chopped
3-oz log goat cheese w/herbs
1 t tarragon
1/2 t salt, white pepper
3 T fresh snipped chives
3 lg shallots
14 stalks asparagus, choooped
1 T butter
3 eggs
1 c half and half

1. crumble goat cheese over pie crust.

2.saute shallots in butter until soft. Add asparagus to skillet. Cover
and turn heat to low. Steam for 3 - 4 minutes until tender but not too
soft.

3.remove from heat and toss through with salmon, tarragon, and chives.
Spoon over pie crust.

4. Whisk together eggs ,salt, pepper, and half and half. Pour over pie
crust.

5. Bake at 350 for 40 minutes, until set but soft. Let stand 5 minutes
before cutting.


You can top this with hollandaise if you want to be decadent!! i serve
it with some type of potatoes, a bread (croissants are good), and a
fruit salad for a wonderful brunch.
