Cool! :-) But, I'd probably pass on the pepperoni (too salty IMHO!) and
substitute maybe some other canned meat like canned crab or even salad
shrimps?

Other than that, I'd not alter it! I like the idea of Italian dressing
in place of mayo...

I'd probably go with shrimp. Its stronger flavor would probably stand up
to the dressing better than crab. That's just my uneducated guess.

Yeah, it makes a nice summer salad that doesn't necessarily require other
foods to go with it to make it a meal. Maybe some fresh fruit ...

Crash hasn't eaten today, either, but it's hard to get him to eat when he
doesn't feel like it. The man drives me nuts sometimes!

I haven't made a cold pasta salad in a long time. We have medium shells.
I'm not sure if they're too big for tuna salad or not. Might have to use
marinara on those. Next shopping trip, we'll have to grab some of the
little circles and little shells.

Sliced fresh strawberries with whole blackberries, blueberries, sliced
peaches (canned or fresh) and a few whole green seedless grapes,
marninated overnight with some rum and turbinado sugar.....

Serve over pound cake with some fresh whipped cream!

I like to use a nitrous whipper to save time. <G>

2:31 am is not late. ;-) I'm usually up until at least 3 am!
I'm not bothering with changing my settings at the moment, I usually
post as Katra...

For pasta salads, I personally prefer the tri-colored twisty pasta. Adds
interesting color and flavor and the twistie's pick up the sauce nicely!

Do they make the little shells in a tri-color???

Dad's been getting a bit bored lately with my usual offerings. I can
tell. <G> Might be time to vary things a bit and try some pasta salad!
But, I'd have to come up with a "hot" recipe he can nuke.

What would be a good "dressing" for a hot pasta salad other than
marinara? Maybe a canned Alfredo?

I've been falling asleep around 6 or 7 lately. Not sure how that happened.

Ragu cheese sauce. It's a lot better than I expected it to be. It was
first served to me when I visited someone. I think I've only bought it
once since then, but I'd buy it again. Fast and easy macaroni and cheese.
I'm thinking that a small jar of chopped pimientos might be just the thing
to jazz it up a bit. Would canned green (mild) chilies work, do you think?

Chopped canned green chiles could be interesting. They are a tad salty

I don't have a jar on hand so I can check the sodium content, but I would
expect the cheese sauce to be salty. Cheese just tends to be salty. If
you want to use the green chilies, maybe you could rinse them well to
diminish any unwelcome saltiness.

I do that with green olives...
I dump the brine and refill the jar with water for at least 24 hours. :-)

I could just not be too lazy and slice and sautee' some fresh poblano's
too...... but the whole idea of comfort food is quick and easy! Right?

I've never tried the cheese. Guess I should. Used to go to a restaurant
that made a super Tuna Melt w/cheese (of course), and I loved the taste.

Yup! I tried DaVinci's first. I think that's how they recycle cardboard
boxes, I really do. It went in the trash.

Dreamfields is excellent, though. I wish it came in more shapes. I wrote
and asked about lasagna noodles, and they said to watch the shelves because
more shapes are in development.

Right now, I'm easing my way back to low carb. I've started by eliminating
sugar and obvious snack foods (the dogs love the generic Cheetos). Once
I'm emotionally stable (no smart-ass remarks - LOL) with the no-sugar part
of the plan, I'll start chipping away at pastas, potatoes (easy, because
they usually make me sick), baked goods, and rice. Cold turkey is a very
unpleasant way to go low-carb. In the meantime, I'm going to enjoy a few
foods that I know will be things of the past in the near future.

BTW, Hood's Carb Countdown is a very good milk product. They remove the
lactose and replace it with sucralose (Splenda). The finally product is a
little on the sweet side, but hey, it's milk. I think (from memory) that
the change is carbs is from 15 per cup to 3 per cup. Don't quote me on
that, but the difference is significant.

I've never used them, but that'd be good. I bought a couple small jars of
them the other day. They are Ghastly. I liked the ones that came in huge
jars at Sam's Club, though. Gotta get back over there sometime.

I use rotini, farfalle, or egg noodles in mine; I think those all
appeared when I was a kid.

My mom's left the peas out, and put a lot of cheddar (and some dehydrated
onion) in. I put french cut canned green beans in mine and use two cans
of cream-o soup.

Cold tuna pasta salad is really ace with Italian olive oil pack tuna and
some marinated artichoke hearts. No mayo needed. But that is certainly
not the macaroni salad of my childhood! ;-)
