Default Intro and egg question

Hi all,
My name's Liz and I've been lurking here off and on for a long time. Picked
up a whole lot of great recipes but thought I might start posting now and
then - mostly with questions - as there's always too much I don't know. I'm
a one pot or minimalist cook who never has enough time for anything
complicated. I love my slow cooker.

Question: if I cook hard-boiled eggs how long can I keep them in the fridge?

The FDA says to use them within a week.

About a week. Write in pencil on the shell the date they were cooked -
a reminder for you to use them up. For more info: <www.aeb.org>

HOW LONG WILL EGGS KEEP?
A: Fresh shell eggs can be kept refrigerated in their carton for at least 4 - 5
weeks beyond the pack date. Quality losses should be insignificant if the eggs
are refrigerated as soon as possible after purchase from a refrigerated case.

Hard cooked eggs should be kept in the refrigerator for up to one week.

I must admit I have kept pealed eggs in a baggie a little longer than that.

The raw ones keep for like a month. Hard to see that hard boiling would
decrease that time, unless they crack.

Boiling an egg removes the waxy coating that helps defend against the entry
of bacteria. Also, raw eggs are still living . . . boiled eggs are dead.

Food safety is not the only issue here. Fresh flavor is lost with time as
well.

Eggs are engineered (by Mother Nature) to be quite impervious to
anything entering... but cooking destroys that hermetic seal... if
boiling water were tossed on your skin you'd be prone to infection too.

A raw egg is not alive unless it is fertilized, and then only a small part
of it- the embryo - is alive. Freshness is a concern but it is a taste
concern and not a safetly concern.

Yup, flavor is why I try to use mine within a week -- they start to
lose their taste after a while...

everytime i see this question it makes me think back to when we were kids and
left the dyed boiled eggs from easter unrefrigerated on the table until they
were gone. sometimes more than a week. we never got sick from it either. go
figure :P

And I remember the day the kids returned to pre-school and I got a
call from the mother who was supposed to drive that day. Would I
drive the car pool? Her family had been in the emergency room the
night before with food poisoning from eating the Easter eggs which had
been left out.

Notice how they say "hard-cooked eggs"? Don't boil them. Put the eggs
in a non-reactive saucepan, cover with at least a couple inches of cold
water. Bring to boil, covered, then remove from heat and let stand
(covered) for about 18 minutes. Go from there.

I do 12 minutes, and they come out perfectly. When I've accidentally
left them longer, sometimes they overcook and the yolks turn green.

I read the thread, but since I never have trouble with my cooked eggs, I
don't have any interest in trying a new method.
