my time in new mexico has made me love mexican culture. we had a fiesta
in my third grade class today, and made salsa and bean burritoes and
mexican wedding cakes (really cookies) and broke open a pinata.

then tonight for dinner, i made huevos rancheros. I softened up some
corn tortillas in a skillet, then put a fried egg (over-easy for me) on
top ofthe tortilla. I covered it in New Mexican green chile sauce and
topped it with cheese. On the side I put diced fried potatoes and fresh
guacamole served on shredded romaine lettuce. I would have liked a
marguerita with it, but I didn't get to the ABC store to buy and
tequila today.
