Apricot Glazed Pork Roast

1 cup chicken broth
18 ounces jar apricot preserves
1/4 cup onion ; finely chopped
2 tablespoon Dijon mustard
Salt and pepper
4 pounds boneless pork loin roast

-= Instructions =-
Combine first 4 ingredients and mix well. Sprinkle pork with salt and
pepper. Place pork in a shallow baking pan, spread glaze mixture over
pork and bake in the oven at 350 degrees for about 2 hours or until
pork is no longer pink and juices run clear.
