Quick Spam Casserole

1 can sliced mushrooms - (3 oz)
1/3 cup diced onion
2 tbl butter
1 tbl flour
1 can cream of celery soup - (10 1/2 oz)
1 cup milk divided
2 cup cubed Spam
(ham may be substituted for the squeamish)
1 cup biscuit mix


* Brown mushrooms and onion in butter. Add flour; blend well.
Dilute soup with 2/3 cup of the milk; add Spam (ham may be
substituted) to onion-mushroom mixture. Bring to a boil, stirring
occasionally. Pour into ungreased 1 1/2-quart baking dish.
* Mix biscuit mix and the remaining 1/3 cup milk, drop batter by
spoonful onto the hot Spam mixture. Bake in 450 degree oven 15 to 20
minutes or until biscuits are browned.
