What can substitute for cilantro in a cucumber and red pepper salad?

I have substituted parsley for cilantro. It gives the colour but not the
texture. Maybe you could file up a few pennies to give it that copper taste
that I detect in cilantro :-)

It depends -- why dont you want to use cilantro? IIf you dont like itrs
taste, I would probably use parsley or dill. Cucumbers like dill.

LOL Not a cilantro lover Katra? My wife likes most foods, but she is not a fan
of cilantro, and lots of others truly dislike it. I like it and find that
cilantro, in the right amount can really make a dish.

I can vouch for disdain for cilantro (I love it!). I was in the ER one
night waiting and the doctor started talking to me about food. I was ill and
didn't want to talk, but someone mentioned some Asian food, and the word,
'cilantro' must have/might have come up. The reason I remember it is that
the females on the desk/and-or nurses - perhaps three of them were saying
the word in a most disdainful (and loud) way, pronouning it is various
demeaning ways, making fun of someone (perhaps me?) who said they really
liked it and going on/and/on about it, creating more conversation I've ever
heard about one little green leaf. You would have thought they were
discussing eating fresh monkey brains from a container. I was glad there
was nothing seriously wrong with me, because I was really glad to get out of
there -- there was not a glimmer of sunshine in sight on any faces I saw.
I would say that their dislike of cilantro might fall under the category of
something more than taste. Yikes!

We've had _numerous_ discussions about cilantro on this list. ;-)
Seems you either love it or hate it. I'm of the latter crowd. <G>

Same goes for Raddichia/Arugula!
Around here, the pots are usually tagged "rocket lettuce".

I'll try nearly anything once. Heck, I even like rattlesnake, squirrel,
bear, porcupine and frog legs, and a hyogge variety of leafy greens!

The two above have been long crossed off my list, along with bell
peppers and beets. ;-D

its funny. ive read so many places that *some* people detect a soapy or
copper-like taste in cilantro, and thats why they dont like it. i can
taste a bit of those things in cilantro, but thats part of why i like
it. i guess im just abberrant

I made a cucumber, jicama, and red pepper salad last night. (No recipe,
just off the top of my head.) I used some fresh oregano I have growing
in a pot by the front porch. Not bad at all.

The first time I bought it, all the way home, something smelled like
insecticide to me. Got in the house, and the insecticide smell followed.
I finally isolated the source of the smell and decided I didn't even want
to taste it (it was a new food to me at the time). So what did good ol'
Carol do? Put the cilantro down the garbage disposal. Talk about bruising
the leaves and releasing their scent! Whoa!

Now I love the stuff.

that reminds me of the time my parents invited a number of people to
dinner one night. my dad is very sensitive to scent, and he started
flipping out about some odd smell- and was asking everyone if they had
used some strong smelling lotion... anyhow, it turned out that he'd used
some new soap my mom had bought and put in their bathroom, and that was
the thing he was smelling. he put his hands to his face and cried :"oh
god, its ME!". it was quite amusing. i dont like the way that particular
soap smells either. my favorite, they have stopped making, however :<

OB food: grilled asparagus with garlic chives, fresh oregano and lime
juice. quite tasty.

That makes two of us. The very first time I bought it, I got it home and
thought the smell was strange. I tasted it and decided it was spoiled.
Into the disposal it went.

I love it now, too.

But likely only those who don't like it - I don't think I've come across
another food that can taste so different to different people - normally if I
speak with someone who doesn't like something that I do, they still describe
the flavour the same as I would, but not with cilantro/coriander leaf. It
never tastes soapy or coppery to me, of slightly oily orange, maybe...

This one is different than most other foods, though. It's a genetic
thing. For those people that taste soap when chewing cilantro, it's all
pre-ordained. They have a genetic element that makes it happen. The
number I've heard is 30% of all humans react that way.

I've noticed that people either like cilantro or absolutely
despise it, and most who tell me they despise it say it has a
"soapy" flavor just like Katra did. (Personally, I'm OK with
it, but it does have a favor all its own and that flavor doesn't
play as well with as many others as, say, parsley - so I grow
parsley and not cilantro, f'rinstance.)

But that also says, getting back tot he original question, that
there isn't going to be any real "close approximation"
substitute for cilantro. Some sort of parsley's about as close
as I can think of, but it really isn't going to come close to
duplicating the taste.

Absotively! Really brings out the flavor. Someone suggested using a food
processor instead, but I like to do things in the old, familiar ways.
