Default One more strawberry recipe...well, okay, 2 recipes...

I posted several recipes in the strawberry thread, but forgot these two:

Strawberry Nachos
3 flour tortillas
granulated sugar (superfine if you can find it)
cinnamon (Vietnamese is really good for this)
2 pints strawberries, hulled and sliced
1 tbsp Grand Marnier or Triple Sec
1 pint heavy whipping cream

Lightly combine berries with liqueur and sweeten to taste. Chill.
Whip cream, sweeten to taste. Chill.
Cut the tortillas into triangles (pie wedges) and fry or bake until golden
and crisp. Sprinkle with cinnamon and sugar.
Assemble just before serving. Top chips with strawberries, then whipped
cream. Simple, but very tasty!


Strawberry Pizza
"Cheese"
1 pint mascarpone cheese
1/4 cup powdered sugar
4 ounces white chocolate, melted
1/2 pint whipped heavy cream, sweetened to taste
1 tsp vanilla extract
Let mascarpone soften at room temp., then combine with powdered sugar, white
chocolate and vanilla. Fold in whipped cream.
"Crust"
2 cans Pillsbury refrigerator crescent rolls OR 1 recipe puff pastry
Shape into round and dock with fork. Bake on pizza pan until deep golden and
done. Cool.

Spread crust with mascarpone cheese mixture, then top with sliced (sweetened
if desired) berries. For contrast, try adding blackberries and kiwi slices.
