Default Veggie wrap

Ok, creative people. Trying to be healthy so I bought low carb wraps. I
thought I would do fresh veggie wraps for lunch. I shredded carrot, purple
cabbage, onion and cuke and added mixed greens. Your suggestions on what
sort of low-fat dressing I could use would be appreciated. Right now I just
put some Ken's Country French on it. Not bad, but I know this group has
better ideas!

Are you allowed to put a schmear of cream cheese on it beforeyou start
wrapping and rolling? Seems like that would help keep things in place.
I dress my salads with a spritz of olive oil and some dribbles of
balsamic vinegar.

Sheraton

Fat free (ugh!). But as a treat..........a salmon roll wrap with smoked
salmon, onion, capers and cukes. I had one of these at Whole Foods. Yum!!!
As for the olive oil and balsamic........that is my spritz of choice.
Although i have started marinating garlic in olive oil and adding a bunch of
lemon. R

How about some sort of roasted pepper puree? You could spice it up
however you want and even blend it w/ the cream cheese. Or just include
roasted pepper strips in the wrap. Or use salsa, or salsa pureed w/
some black beans or pinto beans, with a squeeze of lime juice.

For a change, you could roast veggies first...red peppers, purple onion,
eggplant, zucchini...they're delicious cold. You can toss them in
balsamic vinegar and herbs before wrapping.

If you don't mind fat free mayo or cream cheese, you could mix it w/ a
little basil pesto. Or, try this cilantro pesto...it has no cheese, and
I only used about half the stated amount of oil....I added a litlte at
at a time and had quite a bit of oil leftover. The recipe makes a *lot*
of pesto, but it lasts a while in the fridge and tastes great on pasta,
chicken, sandwiches, etc. (I did not toast the pine nuts, and I omitted
the jalapeno).

Cilantro Pesto (Bon Appetit magazine, Jan 2005)
1 cup extra-virgin olive oil
1/2 cup pine nuts, toasted
1 bunch fresh cilantro, coarsely chopped (about 2 cups)
1 bunch fresh chives, coarsely chopped (about 1/3 cup)
1/4 cup (packed) fresh mint leaves
1 tablespoon chopped seeded jalapeño chile

1 small garlic clove, peeled
1 teaspoon (scant) coarse kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons fresh lime juice

Combine ingredients in food processor and puree.

I like making veggie wraps with hummus to hold everything together.

Let me know if you like it. I thought the mint and chives were a nice
addition, and it just tastes a little brighter and lighter than
basil/cheese pesto. It also retains its bright green color. Enjoy!

I'll let you know, Chris. My loser grocery store had neither chives nor

Dismissing anything labelled "low carb" as not healthy is narrow
thinking. I'm following a low fat, healthier lifestyle as well and
sometimes I purchase tortillas that are advertised as "low carb"
because they are higher in fiber than regular tortillas (and contain
either the same amount of fat or less). I agree that many food
products that are labelled "low carb" are high in fat and are unhealthy
in other ways, but I read labels and make educated choices. I think
the OP is also doing this.

Heidi, IMO you are right on the money. I have to follow a low fat diet
(most of the time for heart problems and a lower carb diet for diabetes.
The 2 don't mix. The diabetic nutritionist was an enormous help with
sorting all of it out. Basically I watch my fat intake and use as few
carbs as possible but I'm not so stingy with the carbs. So far my health
has improved and I've managed to put on some weight (a good thing for me).

My fav veggie wrap is hummus, carrot, cucumber, and greens.

I like spreads better than dressings on wraps, they work as "glue" and
don't drip like dressings do. The aforementioned hummus, roasted red
pepper puree, artichoke spread, cream cheese (plain or with fresh
herbs), or goat cheese are my picks.

i was being snarky, but not entirely serious, either. its hard to get
that connotation across in type
i also am a consumer of things technically "lower carb", and i do try to
avoid refined sugars and starches. i just am not a huge fan of fake
food- low fat, low carb, subsititutes for real food. most of those sort
of products are simply crutches for learning how to eat more
healthfully, however you define it. most of then taste like crap, too, IMO.
still kills me when im in the stupidmarket and see flag signs on the
shelves under spam and margarine extolling their virtues as low carb
items. bleh.

i like sauteed tempeh (i guess you could roast it, if you wanted to use
less fat), spinach, onions, cucumber and annie's goddess dressing mixed
with hummus as the spread. the dressing is definitely not low fat,
though. (tahini based). you could probably use hummus with a little
toasted sesame oil and get a similar flavor. tres yummy.

I don't know wraps, but I'd suggest Ken's (Plain or Lite) Caesar
dressing. It's a genie in a bottle on salads.
