Please, a question. I once simply fried scallops, in mostly butter, I
think. They were wonderful, but I have forgotten what may be the rules
for preparing such. Is it simply a quick fry, or do they need to be
simmered for some time?

They cook very quickly. One of the worst things you can do to scallops is
to overcook them.
