Hey all first post here.
Sunday dinner...was having some friends come by, this couple I know. Were going to grill, but the weather had other thoughts. So I had this 3.65 lb. 'Top Round first-cut London Broil' and had the itch for shrimp & rice. Set the meat to marinade in the afternoon in a mix of soy sauce, worcesteshire (sp?), garlic, evoo, honey, salt & pepper. An hour and a half later, friend called, 3 other people were coming. Figured all was cool, plenty food to go around as is. Set the shrimp to marinade in tequila, evoo, & garlic. Set my yellow rice (I swear by the Goya brand) to cook in the rice cooker with corn, onions, peppers, garlic (can you tell I like garlic), & a pat of butter. Was wishing I had the dry chorizo on hand, but alas, none was to be had. Cooked the meat to medium rare, sauteed the shrimp, reduced the tequila sauce, sauteed up a batch of onions & cremini 'shrooms for the beef. Friends came by, brought 2 salads & eggplant parmesan, some kickass wines, and had a blast. I was lucky enough to end up with most of the leftovers (house benefit!), which I've been happily gobbling up. Cheers! -Dan |
