Default Dinner: Potato Gratin (rec included)

Parbake 2 large poatatoes in the microwave, about 3 mintes, or use up
old baked potatoes this way.

Slice the potatoes and salt them.

Drain 1 can artichoke hearts and slice. Mince 1/4 c p[arsley,

Set veggies aside while you make the sauce.

Saute 1 large onion and 1/4 lb. minced mushrooms until soft. Sprinkle
with 2 T flour. Cook for 2 - 3 minutes on low. Add 2 c milk and/or
cream (1 used 1 1/2 c 2% milk and 1/2 c half-and-half). Simmer on low
until very thick and creamy.

In a greased casserole, layer potaotes, artichokes,and parsley.

Cover with the sauce.

Top with 1/2 c shredded parmesan or asiago cheese.

Bake at 375 for 45 minutes,, or until fork-tender.

Nice variation on a comfort food!
Serve with a big fruit salad.
